The short answer: there is no best knife steel. Every alloy trades edge retention, toughness and corrosion resistance against each other, and improving one comes out of at least one of the others. What you should buy is decided almost entirely by how you sharpen — not by which steel scores highest on a chart.
The three properties, defined plainly:
- Edge retention — how long the blade keeps cutting before it needs sharpening. Driven mostly by hardness and by the volume of hard carbides in the steel.
- Toughness — resistance to chipping and cracking under impact or lateral load. Largely the inverse of hardness, which is why very hard steels chip.
- Corrosion resistance — driven by free chromium content. Above roughly 11 to 13 percent chromium, a steel is considered stainless.
Every steel below is a different point on that triangle. None of them is cheating it.
The steels you will actually encounter
Budget stainless: 8Cr13MoV, 4Cr13, 1.4116
Soft, tough, corrosion resistant and easy to sharpen on anything. They dull faster than anything else here and come back in about a minute. If you sharpen weekly, these are genuinely fine and the money saved is better spent on a stone.
The value tier: 14C28N and 9Cr18MoV
A real step up in edge retention while staying easy to sharpen and highly stain resistant. 14C28N in particular is the steel to look for at the $30 to $60 mark — it is the best compromise available to someone using a basic whetstone.
D2: the semi-stainless workhorse
Roughly 12 percent chromium, which sits right at the stainless boundary — so D2 is often called semi-stainless and will spot if you put it away wet. It holds an edge two to three times longer than a budget stainless and is genuinely stubborn to sharpen without diamond abrasives. D2 at thirty dollars is the biggest value story in modern pocket knives.
S30V and S35VN: the American premium standard
Powder metallurgy steels with excellent edge retention and good corrosion resistance. S35VN is a refinement of S30V that is slightly tougher and marginally easier to sharpen. Both need diamond or CBN abrasives to sharpen properly. Both are what you buy when you own a guided system.
MagnaCut: the genuinely new one
Designed specifically to break the usual trade-off, MagnaCut achieves high corrosion resistance without the large chromium carbides that normally cost toughness. It is one of the few genuinely novel things to happen in knife steel in a decade, and it commands a price to match.
Carbon steels: 1095, SK-5
Not stainless at all, and that is the point. They take a keener edge than most stainless, come back fastest on a stone, and throw sparks off a ferro rod. They rust readily. This is the bushcraft trade, and it is a maintenance commitment rather than a performance one.
So which should you buy?
- Cheap pull-through sharpener, or you do not sharpen: 14C28N or a budget stainless. Premium steel will simply become permanently dull premium steel.
- A basic whetstone and some patience: D2 is the value sweet spot, with 14C28N the easier alternative.
- Diamond stones or a guided system: S30V, S35VN or MagnaCut. Now the retention is a genuine benefit rather than a maintenance problem.
How these were picked
I haven't handled these. Here's what I did instead.
Everyone in this category says they tested twenty of these. I haven't tested any, and I say so. What I do instead: read the manufacturer's manual and published specification, compile the numbers that decide the purchase, do the arithmetic in the open, check the live price, and name one product to skip. The scores above are judgments from that research against a published rubric — they are not measurements I took, because I do not have a lab and I am not going to pretend otherwise.
